This salted caramel apple galette is made with butter-sauteed apples and cinnamon, coconut sugar, a touch of nutmeg and homemade salted caramel sauce all poured on a pie crust and folded up into a rustic galette - it doesn't get much easier or delicious than this!
Made with a store bought pie dough, this apple galette literally takes about 10 minutes to throw together. Pop it in the oven, and you've got a beautiful rustic, caramelly cinnamon apple dessert in under an hour.
The caramel melds with the pie crust to make this absolutely wonderfully chewy candy like texture which is just amazing with the buttery, cinnamon spiked apples.

A galette is a French pastry typically made with filling placed on top of flat pastry dough with the edges folded up around the filling. It is like a free-form pie. Galettes have a "rustic" look to them.

Any baking apple works great for the apple filling. I am partial to granny smith for the tartness, but use any apple slices you prefer.
To make this recipe ultra easy, store bought pie crust is used to make the buttery pie crust. You can make your own from-scratch pie crust if you prefer.
For the caramel, we use store bought caramels and melt them down, but you can make your own caramel from scratch, or even buy pre-made caramel sauce that works well also.
Variations and substitutions
- Substitute pears for the apples, or do half pear, half apple to make an apple pear galette.
- Also substitute cherries, plums, or apricots for half the apples.
- The salted caramel is optional. If you choose not to use it, spread a thin layer of jam on the pie crust before adding the apples to keep the pie crust from getting soggy.
- Add cranberries in place of half the apples for an apple cranberry galette.
- Use all granny smith apples, or a combination of tarter (granny smith) and sweet apples (gala, honey crisp, etc.) - whatever apple variety you prefer in an apple pie!
- Sprinkle crushed pecans on top for added texture.

- Always bake the galette in the middle of the oven to prevent over browning.
- Bake on a rimmed baking sheet on a layer of parchment - this prevents sticking and spillage.
- A layer of caramel on the crust before adding the apples prevents it from getting soggy.
- Leave a 2 inch border around the edge so there is space to fold up the edges.
- Cooking the apples before adding them allows them to release some liquid, which helps prevent the crust from getting soggy when we bake the galette.
- Don't over stuff the galette - if it is too full the crust may become soggy. The apples should be in an even layer.
- You can make this in advance by assembling it and storing the galette in the fridge overnight (wrapped in plastic wrap). Also freeze the assembled galette and bake straight from frozen - just add an extra 2-3 minutes to the bake time.

While both typically consist of fruit baked in a pie crust, a pie has thick sides and is baked in a pie dish while a galette is a thin "pie" basked directly on a baking sheet.
You can store leftovers in an airtight container at room temperature overnight, or in the fridge for up to 3 days. Reheat in a 350°F degree oven for the best results.
You can make this caramel apple galette ahead of time and freeze it. Assemble the galette and place on a baking sheet directly in the freezer for one hour. Remove from freezer and place in a freezer safe container/bag and freeze for up to one month.
To bake from frozen, follow the same instructions, adding 2-5 minutes to the bake time (or until the crust is golden brown).

Salted Caramel Apple Galette
Ingredients
- 1 pie crust
- 4 cups sliced apples
- 3 tablespoons salted butter divided
- ½ teaspoon ground cinnamon
- 1 tablespoon lemon juice
- ¼ cup coconut sugar substitute brown sugar
- ¼ teaspoon ground nutmeg
- 15 vanilla caramels
- 2 teaspoons heavy cream
- ¼ teaspoon salt
- 1 egg beaten for egg wash
- 1-2 tablespoons coarse sugar crystals
Instructions
- Preheat the oven to 375°F degrees.
- Heat the butter in a skillet over medium heat. Add the apples and saute until they start to soften, about 5-7 minutes.
- Add the cinnamon, nutmeg, coconut sugar, and lemon juice. Continue cooking, stirring periodically to prevent burning, for about 5 minutes. The mixture should be thick.
- Remove from heat and set aside. Lay the pie crust on a parchment paper lined baking sheet. Pour half the caramel mixture on the pie crust and spread (see below for caramel instructions).
- Pour the apple mixture on top, leaving about 2-3 inches at the edge of the crust, and drizzle with the remaining melted caramel.
- Fold up the edges around the apple mixture. Brush the edges with egg wash and sprinkle with the coarse granulated sugar. Dot little pieces of butter on top of the apples.
- Bake for 40 minutes, or until crust is golden brown. Remove and let cool fully before slicing. Serve with vanilla ice cream.
