Ooey, gooey, fudgy delicious brownies filled with caramel and chocolate, these Rolo brownies are super easy to make and absolutely deliciously decadent!

Chewy, chocolatey, rich, decadent Rolo brownies. Guys, I love these brownies so much.
And I won't even tell you how much the boyfriend loved them. Brownies are his favorite treat, and these really won him over.
It's the best thing ever when you take a bite of brownie and get that gooey caramely bite with the Rolo in it.
It's LOVE.
And these are the easiest brownies you will ever make. Seriously, so easy.

The Ingredients
So guys, I like to use a brownie mix. So are these brownies totally from scratch?? No. Definitely not. Honestly, I'm not really interested in making brownies from scratch at this point in my life.
I know from scratch is better, but these are just easier, and super amazing. And I know how busy you guys are.
While you can use any brownie mix for thees brownies, my favorite is the Ghirardelli Double Chocolate Brownie mix (affiliate link - I earn a small commission if you buy through this link).
It is perfectly fudgy and chocolaty with added chocolate chips. The brownies always come out nice a chewy (just the way I like them).
And then you need Rolos. If you've never had a Rolo, then you've never lived. You need these in your life. Chewy caramel and milk chocolate in a individual bite size, I love these things (affiliate link - I earn a small commission if you buy through this link):

Step By Step Instructions
Make the brownie batter according to the package on the box. Pour the batter into a parchment paper lined 8x8 baking dish.
If you haven't been using parchment paper in your baking yet, you should totally try it. It makes it so much easier to lift the brownies out of the pan and slice them. No more struggling to slice and remove them from the pan!
Count out 16 Rolos and unwrap them. Push them into the batter at even intervals. It is ok if they don't go all the way into the batter, they will melt as the brownies bake.
Cook the batter according to the directions on the package. I typically cut the cooking time by about 1-2 minutes because I like extra gooey brownies. I cooked these brownies for 38 minutes.
Eat some Rolos while you wait. This isn't mandatory, but highly recommended.
Let the brownies cool fully, lift out of the pan, cut and serve.

Gooey Rolo Brownie Recipe
Ingredients
- 1 box Ghirardelli Brownie Mix Ghirardelli Chocolate Double Chocolate Brownie Mix 18-oz
- 16 Rolos Rolo 4 Pack - 208g
Instructions
- Preheat oven to 325 degrees (according to the package).
- Make the brownie batter according to the package on the box. Pour the batter into a parchment paper lined 8x8 baking dish.
- Count out 16 Rolos and unwrap them. Push them into the batter - it's ok if they don't go all the way down, they will melt as the brownies bake.
- Cook according to the directions on the package (about 40 minutes). Let cool fully, lift out of the pan, cut and serve.
