Fresh, juicy grilled peaches, nutty baby arugula, crunchy walnut and creamy, tangy blue cheese make this Grilled Peach Salad the perfect summer salad!
It's summer, it's hot, the grill is on and this salad is the thing you need to be eating. I could not get enough of this salad.
Grilling the peaches gives that that slightly smoky flavors, and makes them ultra sweet and juicy. You can substitute grilled mango too!
Blue cheese has a sharp blue mold taste with a fine, nutty aroma and hints of bitterness. The blue cheese complements the sweetness of the peaches perfectly. I mean, honestly, the plain peaches and blue cheese is also an awesome appetizer.
Ingredients
Baby arugula, fresh peaches, bacon, white balsamic vinegar, walnuts, blue cheese and onion and are the main ingredients.
I use the Castello Danish Blue Cheese in this recipe, but Castello has a variety of cheese with all different tastes and textures. If blue cheese isn't for you, they also have a creamy havarti or dill havarti, both of which are milder in flavor.
Castello products can be found in the specialty cheese aisle in your local grocery store.
Ingredients for Bacon Vinaigrette
You can also serve this with a strawberry salad dressing if you prefer to keep it non-meat.
