A classic dish, these Creamed Pearl Onions are caramelized then simmered in a cream sauce until sweet and tender. It's the perfect easy side dish for any meal, taking under 20 minutes to make!

This in onions on a whole new level guys. The cream sauce is seasoned with a touch of nutmeg to give it a warm, satisfying flavor, as well as garlic, butter and a little dry sherry for extra flavor.
And it all comes together in under 20 minutes, which is perfect for either an easy weeknight dinner or holiday dinner side dish. Plus, they can be made in advance and reheated for extra convenience!

Ingredients
Pearl onions are small, slightly sweet, marble sized onions that can be bought either fresh or frozen. I prefer frozen as they are already peeled. If you buys fresh, you'll need to peel them which can be a hassle.
Dry sherry is used to deglaze the pan, but white wine or beef broth/chicken broth can be used as well.

Step By Step Instructions
If you are using fresh pearl onions, you'll need to peel them first. If you're using frozen, skip down to step two.
To peel them, first drop them in boiling water for about 30 seconds then transfer them to a bowl of ice water. The peels should just slip right off.
Step 2: Heat the butter in a skillet on medium heat. Add the garlic and saute until soft, about 2-3 minutes.
Step 3: Add the pearl onions and saute for about 5 minutes, until they start to brown on the outsides.
Step 4: Add the sherry, parsley, and nutmeg. Simmer for about 5 minutes.
Step 5: Add the cream and simmer for 5-10 minutes OR until thickened and creamy.
Step 6: Add the salt and pepper. Serve warm.
Variations
- Add a cup or two of frozen peas or corn towards the end (about 3-5 minutes before the onions are done cooking);
- Add chopped squash, cauliflower or carrots in with the onions. You may need to blanch the cauliflower or carrots first as they take longer to cook (how to blanch vegetables);
- Add chunks of roasted garlic in with the onions (how to roast garlic);
- For a touch of spice, add ¼ teaspoon of cayenne pepper;
- Add 2 pieces of crumbled bacon with the cream;
- Add chopped leftover ham, turkey or chicken for a meatier dish.
Expert Tips
- If using frozen pearl onions, do not thaw them before adding them to the pan.

- 1 tablespoon butter

Not sure how this was supposed to thicken. I ended up sprinkling in some flour.
The onions are sautéed and not truly caramelized. Nutmeg adds an interesting flavor.

I'm sorry it didn't turn out like you expected! You do need to let the onions brown on the outside to get the caramelized effect. Typically, the sauce thickens as it simmers, I'm sorry you didn't have that experience. I appreciate your feedback!
