Sous Vide Flank Steak
Season with salt and pepper.
Vacuum seal in a plastic bag and cook at 129F degrees for 2 hours in the sous vide water bath.
Remove from water, open bag and place steak on plate. Pat dry.
Sear on extremely high heat for 45 seconds a side.
Add brandy to de-glaze the pan.
Add the crushed peppercorns, salt and beef broth and bring to a simmer. Add cream and simmer for 5 minutes.
