Spam and Eggs is our new go-to breakfast option. It's meaty, salty, fatty, and delicious on so many different levels.
Spam is a type of processed meat widely used in many different recipes, including this one, and is one of my favorite ways to flavor a dish in a quick, cheap and easy way.

Really guys, any kind of eggs goes great with this recipe. We kept it simple with scrambled eggs to make it quick and easy, but use any method you like.

Ingredients

You'll need a can of spam, cut into ½" cubes for this recipe. The spam should be cooked in a pan over medium heat until lightly browned, about 5 minutes.
Next, you'll need to cook the eggs. You can also use duck eggs or quail eggs in this recipe, whatever you have on hand. We've got this influx of duck eggs from the in-laws that I'm just a little bit in love with.
The steamed white rice adds a wonderful texture and flavor to the dish, so be sure to cook it according to your preferred method.
To finish the recipe, add some extra seasoning or toppings as desired, like this furikake seasoning.
Step by Step Ingredients
Heat half the oil in a skillet over medium heat.
Add the spam and cook until edges start to brown.
Add the remaining seasonings (except salt, rice and eggs) and stir to fully coat the spam.
Cook for 2-3 minutes, until spam has caramelized. Remove from skillet and set aside.
Add the remaining oil and cook the eggs until fully cooked through, stirring gently to break the pieces up. Be careful not to overcook!
Stir in the spam and remove from heat.
Serve over the steamed white rice with sliced green onions and a sprinkle of furikake seasoning.
