You guys, this recipe is so quick and easy to make. It requires very little prep time and all you need is a simple seasoning that’s made with pantry staples.
Seasoned potatoes are ideal for the air fryer. They get crispy on the outside, fluffy in the middle and usually cook in half the time. And you can easily fry this up while you wait for your whole air fryer chicken to rest.

- While oven roasted baby potatoes can take as long as 45 minutes (like these crispy roasted potatoes), the air fryer cuts that time in half.
- The potatoes get ultra crispy on the outside but you need very little oil thanks to the hot air circulation of the air fryer.
- There’s no need to peel, parboil or soak the potatoes, so prep time is minimal for this recipe!
- They are coated with simple oil and seasonings making this a very versatile side dish.

Ingredients

You’ll need 12 ounces of white baby potatoes for this recipe - they can be white, yellow or red. To ensure they air fry quickly, you’ll want to cut them in half. If you can’t find any mini/baby potatoes, feel free to use full size potatoes and just cut them in quarters.
To get the potatoes extra crispy on the outside, they’re coated with a small amount of oil. You can use your preferred oil (we like olive oil and avocado oil).
The potatoes are seasoned with a simple mix of salt and pepper, garlic powder and paprika. Feel free to change things up with different dried herbs and spices. Sometimes we like to add a little homemade Creole seasoning to spice up the potatoes!
Substitutions and variations
- Use any seasoning you prefer in place of the seasonings used here. You can also add dried herbs or fresh herbs like oregano, sage, rosemary or thyme.
- We love using some sous vide garlic confit and mixing it in with the potatoes when cooking. The garlic gets nice and chewy/crispy and gives the potatoes a great flavor.
- Top the potatoes with fresh grated Parmesan when they're done cooking for a nice boost of umami flavor.
- Add a squeeze of fresh lemon when they come out of the air fryer for an added boost of freshness.
- Substitute red potatoes or purple potatoes for the white potatoes/
Step by step instructions

- Combine all the ingredients in a bowl and mix well to make sure the potatoes are coated.

- Cook at 400°F for 15-20 minutes, shake the basket halfway through, until browned and crisp on the outside.
Garnish with parsley and serve with ketchup, Cajun remoulade sauce or ranch dressing.

- You don’t need to peel the potatoes, but you’ll want to give them a quick rinse and scrub them clean if necessary.
- Be sure to pat the potatoes dry before seasoning them. Wet potatoes will not get as crispy in the air fryer.
- To ensure even cooking, make sure your potatoes are all roughly the same size.
- For extra crispy potatoes, arrange them in the air fryer basket in a single layer and don’t overcrowd them.
- Depending on the size of your air fryer, you may need to air fry the potatoes in batches.
- If the potatoes are browning too much on one side, give the basket a shake to rotate the potatoes around.
- If your air fryer requires preheating, you’ll want to do this before adding the potatoes.

Frequently asked questions
The skin on baby potatoes is very thin, so you don’t need to peel them. Besides, the skin gets extra crispy and delicious in the air fryer!
Some recipes call for parboiling or blanching the potatoes first as a way to ensure they get crispy on the outside and fluffy in the middle. I’ve found that the air fryer achieves these results without boiling the potatoes first.
I usually soak my potatoes when making French fries because it helps release the starches and crisp them up. I skip this step in this recipe as the air fryer gets the potatoes extra crispy without soaking them first.
These potatoes are best enjoyed hot and crispy straight out of the air fryer. If you have leftovers, you can store them in an airtight container in the fridge for up to 3 days.
To reheat, just pop the potatoes in the air fryer at 400 degrees for 3-5 minutes, or until the outside is crispy again.
