This Bacon Gravy has just a few ingredients, is super easy to make, and absolutely rib-sticking delicious!
Seriously. So delicious. I've never been a fan of sausage gravy as I don't really like the ground pork sausage typically used in it (however, I do love the Andouille sausage gravy in this Instant Pot Pork Chop recipe).
What I can't believe is how long it took me to think to make bacon gravy. Because, really, who doesn't LOVE bacon???
I can assure you we are a bacon loving family over here. So when I started testing this recipe and realized how easy it is to make gravy with bacon grease (and chunks of bacon, of course), I just fell in love.
Smoky, salt, creamy and just incredible. It's so good over these Pan Fried Pork Chops, Breaded Pork Cutlets, Sous Vide Turkey Breast or these Braised Beef Short Ribs.
Ingredients
Bacon, bacon, bacon. Any kind will work. For a nice peppery gravy, used peppered bacon. But really, any kind.
Whole milk is a necessity to make this gravy. Please do not try and use fat free milk. You just won't get the same creamy results.
In addition to the bacon, you will need some rendered bacon fat. You can get a lot of it from the package of bacon you cook, but may need more. You can buy bacon grease online, or substitute with duck fat or even butter. Not if you substitute, the gravy won't have quite as much bacon flavor.

Step By Step Instructions
Cook the bacon in a skillet and reserve the bacon grease in the pan. Drain the bacon and crumble into pieces.
Make sure you have 5 tablespoons of bacon fat in the skillet (add more if you need to). Heat the skillet over medium heat and add the flour.
Whisk constantly for about 3-4 minutes. Mixture should be a very light golden brown.
Slowly stir in the milk while whisking constantly (this helps to avoid lumps).
Stir in the salt, pepper, cayenne and crumbled bacon and bring to a simmer.
Cook for about 3-5 minutes, until the gravy is thickened. It should be thick enough to coat the back of a spoon.
What to Serve with Bacon Gravy
The first thing that comes to mind when I think of a cream gravy is to serve it over Buttermilk Biscuits. But there are so many other options as well:
- Like I said above, this gravy is awesome over these Instant Pot Pork Chops or these Pan Fried Pork Chops...the pork chops are super delicious and juicy in these recipes.
- Serve it over this Croque Madame instead of the bechamel sauce....let me tell you, THIS is a serious breakfast sandwich.
- OMG, this Chicken Cordon Bleu would be amazing with bacon gravy instead of the cream sauce I used.
- Use it as a dipping sauce for these Mashed Potato Dumplings, Crispy Stuffing Balls or these Jalapeno Hush Puppies.
- Don't forget to use this for all your Thanksgiving recipes!
Expert Tips
- Once you add the flour, use a silicone whisk to whisk constantly to ensure the roux doesn't burn.
- SLOWLY add the milk while whisking constantly. This is important as adding it too fast can cause your gravy to become lumpy.
- Warm your milk slightly (room temperature is ok) before pouring it in the gravy. This will also help to prevent lumps.
- You can add more or less crumbled bacon as you prefer. Be sure to reduce the salt if adding more bacon.
