These Parmesan Truffle Fries are super simple to make in only 30 minutes, and served with the most AMAZING truffle mayonnaise dipping sauce.
Guys. Truffle fries are awesome. You can even make them using this air fryer frozen french fries recipe!
The truffle seasoning gives the fries this absolutely amazing earthy flavor, and the duck fat....oh that wonderfully rich duck fat...crisps the fries up, while the Parmesan cheese adds the perfect amount of umami flavor.
And the smell of baking truffle fries....good god is it incredible. I'm actually drooling a bit just sitting here writing about it. The truffle gives them the most incredible earthy flavor, like we get in our favorite truffle risotto and truffle mashed potatoes.
These fries go perfect with this sous vide venison too!
What are Truffle Fries?
Truffle fries are thin cut fries (like shoestring fries) baked or fried until crispy, then drizzled with truffle oil or sprinkled with truffle seasoning. They are often also sprinkled with Parmesan cheese and other seasonings.
This recipe bakes store bought shoestring fries with truffle seasoning and duck fat until crispy. Then truffle oil and Parmesan cheese are sprinkled on top.

The best part about these fries is that you can use frozen shoestring fries.
OR...you can do this with parsnips and make baked parsnip fries!
Duck fat. My opinion is you should always have some duck fat in your pantry. It's so good on so many things.
Fresh grated Parmesan cheese is a must to get the best flavor - that grated kind in the green container that shall remain nameless is not my thing.
And the optional truffle oil I love to use too - you don't have to, the fries have a great earthy flavor without them - but it adds an extra layer of earthiness that I love. But be careful, many truffle oils are not made with real truffles so I recommend using Truff or Terosso.
What Are Truffles?
Truffles are fungus, similar to mushrooms (some consider them mushrooms but they are not) that grow near tree roots. There are white and black versions. I use black in this recipe.
The reason they are so expensive is due to the work and time it takes to harvest them. Truffles grow underground so they are not easy to find!
Now, real whole truffles are super expensive, so I found this amazing truffle "zest" that I absolutely love (it's made with real truffles, don't worry). Is it exactly the same of fresh grated truffles? No. But it is reasonably priced, has amazing flavor, and can be bought right on Amazon.

Step By Step Instructions
Preheat oven to 425F degrees (or follow instructions on the package).
Remove the fries from the bag and spread them evenly in a single layer on a baking sheet.
Drizzle them with melted duck fat, salt and truffle seasoning. Toss to coat the fries.
Pro Tip: For an easier cleanup, line the baking sheet with parchment paper or aluminum foil.
Bake for 20-30 minutes, flipping halfway through.
Once golden brown and crisped on the edges, remove them from the oven, sprinkle with Parmesan cheese, drizzle with truffle oil and serve with your truffle mayonnaise.
How to Make Truffle Mayonnaise
Mix the ingredients in a bowl. Done. LOL. Easy right?

- Make sure the fries are spread out evenly on the baking sheet so they cook evenly;
- Cover the baking sheet with parchment paper for an easy cleanup;

- Sprinkle the Parmesan cheese and the truffle oil on AFTER the fries have finished baking. Neither are meant to be baked with the fries;
- The truffle oil at the end is optional - you can leave it out if desired, but your fries won't have as much truffle flavor;
- Sprinkle additional truffle zest over the fries after baking for even more truffle flavor.

Truffle Fries
Ingredients
Truffle Fries:
- frozen shoestring fries (28 oz. bag)
- 2 tablespoons duck fat melted
- ¼ cup grated Parmesan cheese
- 1 teaspoon truffle seasoning
- ½ teaspoon salt
- 1 tablespoon truffle oil
Truffle Mayonnaise:
- ½ cup mayonnaise
- 1 ½ teaspoon chopped garlic
- ½ teaspoon salt
- 1 teaspoon truffle seasoning
Instructions
Truffle fries:
- Preheat oven to 425F degrees (or according to instructions on the bag).
- Spread fries on a baking sheet and drizzle with duck fat. Mix the fries with your hands to ensure the duck fat gets distributed.
- Sprinkle with truffle seasoning and salt and lightly toss. Spread fries out evenly on baking sheet in a single layer.
- Bake in the oven for about 20-30 minutes, until golden brown and crispy on the edges. Flip them half way through.
- Once golden brown and slightly crispy, remove from oven.
- Sprinkle with Parmesan cheese and drizzle with truffle oil (optional). Serve with truffle mayonnaise.
