This cheesy garlic roasted asparagus is ready in under 20 minutes, SUPER simple to make and absolutely delicious. It's the perfect side dish and so delicious even your kids might even eat it!
Really, I don't know if your kids will eat it or not. All I know is this is our favorite way to eat asparagus now (along with this amazing sous vide asparagus that's poached in butter).
Roasted cheesy asparagus is just so simple, easy and packed full of flavor - especially the way we do it here. Because Parmesan cheese and garlic guys. Who can say no to that on some veggies?
This roasted Parmesan asparagus is definitely something you're going to want to try if you're a fan of asparagus ...it's the perfect vegetable side dish for your next meal and great for holiday celebrations!

Why this cheesy garlic roasted asparagus recipe works
- The asparagus is roasted quickly at a high temperature allowing it to get caramelized on the outside without being overdone on the inside, like this Parmesan roasted cauliflower or roasted frozen broccoli.

The ingredients
When you're looking for asparagus, try to find stalks that are medium thickness. Too thin and your asparagus may be overcooked, and too thick the stalks tend to be more stringy.
Fresh grated Parmesan cheese will have the best flavor, however, you can substitute the pre-packaged Parmesan cheese.
A high quality olive oil will result in the best flavor, but again, you can use whatever olive oil you have on hand.
You can use garlic powder in place of the fresh minced garlic for this recipe. Sometimes the fresh garlic can burn or get dark too fast, so make sure it is covered with plenty of oil.
Variations and substitutions for this side dish
- Substitute shredded mozzarella cheese, Monterey jack cheese, cheddar or any other meltable cheese you prefer for the Parmesan cheese.
- Add a sprinkle of crushed red pepper for some heat.
- Add a squeeze of fresh lemon at the end for a pop of freshness.
- You can also use a flavored olive oil like garlic, lemon or even truffle for an extra special flavor!
- A light drizzle of balsamic vinegar adds a nice sweet, acidic flavor to the asparagus.
Step by step instructions
- Preheat the oven to 425°F. Place the asparagus spears evenly on a baking sheet.
- Pour the olive oil, cheese, garlic, salt and pepper over the asparagus and toss to coat with your hands.
- Roast for 10-13 minutes, until easily pierced with a fork and the cheese is melted. Remove from oven and serve.

Expert tips to make cheesy asparagus
- Trim the bottom 2-3" off the asparagus to remove the woody dry ends and avoid stringiness when cooking.
- You may need to roast your asparagus for a few extra minutes if the stalks are thicker.
- Thin asparagus should only be cooked for 9-11 minutes.
- Make sure to arrange the asparagus in a single layer so it cooks evenly.
- If you want the cheese ultra browned, broil for 1-2 minutes at the end (reduce roast time by 1-2 minutes).
Frequently asked questions
Roasted garlic asparagus can get soggy if it is crowded on the baking sheet or overcooked. If the asparagus stalks are thinner, reduce the cook time by 2-3 minutes. Also make sure the asparagus is in a single layer and not overcrowded when roasting.
Asparagus does not need to be blanched before roasting. It cooks pretty fast in the oven when roasting.
There is no need to peel asparagus before cooking it. I recommend removing the woody end, which is typically the bottom 2-3".
Leftover asparagus can be stored in an airtight container in the fridge for up to 3 days. Reheat in a 400°F oven for 3-5 minutes to prevent it from getting soggy (microwave will cause it to become soggy).
