Whether it's tomato season or not, these fire roasted tomatoes are easy to make and are just FIRE (pun fully intended)! They have an amazing smoky flavor and can add so much more to a dish than canned tomatoes!
Not only are they easy, you can make them in bulk and freeze them too! I love to use them in place of regular canned tomatoes in all sorts of dishes, but especially in this tomato salsa and even this homemade marinara sauce.
Roasting tomatoes give them an added dimension of flavor which is just incredible. And it's great for those store bought tomatoes that may lack some flavor (like we use in these broiled tomatoes).

Ingredients

The recipe calls for using Roma tomatoes because they tend to be slightly meatier and have a great flavor when roasted. Plus they are the least expensive kind of tomato and widely available. You can substitute any tomato you prefer.
Use a good quality olive oil for the best flavor. I personally always use California Olive Ranch olive oil.
Step By Step Instructions
Preheat an oven or grill to 450F degrees.
Slice the tomatoes in half lengthwise.
Place them in a bowl and add the olive oil, salt and pepper. Toss to fully coat the tomatoes.
Oven Instructions:
Place the tomatoes on a baking sheet, sliced side up, and roast for 40-45 minutes.
Grill Instructions:
Place the tomatoes on a clean, oiled grill, sliced side up, and grill for about 10-12 minutes.
Remove and eat or use right away or pack in olive oil in jars and store in the fridge (scroll down for storage options).
Variations
The simplicity of this recipe allows for all different variations depending on what you plan to make.
- Sprinkle them with oregano and a touch of fresh ground cumin for a Mexican style roasted tomato.
- Add a little smoked paprika and sprinkle them with fresh feta cheese to serve them (I love this version).
- Add chopped garlic and/or shallots to the tomatoes when roasting.
- Fresh herbs like rosemary, basil or thyme can be added to the tomatoes.
- Season with an Italian seasoning blend.
- Sprinkle with a touch of sugar if you want some added sweetness and caramelization.
Expert Tips
- You can use any kind of tomato in this recipe. I use Roma because they are cheaper and more abundant at the store.
- You can also use canned whole tomatoes in this recipe if you do not have fresh.
- If you use the grill to cook them, make sure you oil the grill grates to prevent the tomatoes from sticking.
- If you roast them in the oven, line your baking sheet with foil or parchment paper to make cleanup easier.
- You can try this with other vegetables such as eggplant, zucchini, peppers, and squash.

What I love about this recipe is how versatile it is. You can literally just plate the tomatoes ad eat them, or you can use them in any of these dishes:

If you are unable to find canned fire roasted tomatoes, you can easily make your own with fresh store bought tomatoes.
Fire roasted tomatoes are not typically spicy unless spices are added to them to make them spicy.
Storage Instructions
These can be store in the fridge in a mason jar (or any covered container) for about 5-7 days. Just place the tomatoes in a container and cover them with olive oil.
BONUS Tip: Use the olive oil to flavor dishes now that it is infused with roasted tomato flavor.
They can also be frozen in an airtight container for up to 6 months. You can freeze them whole or puree them and freeze as a sauce.
Note the longer they stay frozen, the more flavor they lose. Thaw in the fridge overnight and use them however you'd like.
