Sopping up all the stewy deliciousness with a crusty piece of butter slathered bread....I'm getting excited just thinking about it.

Step By Step Instructions
Chop up all your ingredients and have them ready to go.
We start by turning our Instant Pot to saute, and heating the bacon fat. You can also use butter or cooking oil, I just LOVE the flavor that bacon fat adds.
Saute your cabbage for about 2-4 minutes, or until it starts to soften.
Add the tomato paste to the pot and stir.
Add the potatoes, carrots, leftover corned beef and seasoning and stir to combine. I add 2 tsp. of black pepper, but if you have a lower tolerance for pepper, add ½ to 1 tsp.
Add the stock and the cream (optional). Turn the IP to pressure and cook on high for 15 minutes.
When done cooking, use the quick release to release the pressure. Season to taste with additional salt (if necessary). Serve in bowls with crusty buttered French bread. Seriously, the French bread is a MUST. Try this easy Crusty French Bread from Natasha's Kitchen.

- Using bacon fat to saute the cabbage adds and extra layer of flavor and richness to the soup. However, if you don't have bacon fat, you can substitute butter or other animal fat.

This recipe is very simple, using only salt and pepper. However, you can add 1 tsp. of yellow mustard seed if you want to add a little tang to the soup.
Is Corned Beef and Cabbage Soup Healthy?
Corned beef is a fatty cut of beef, and tends to be packed with sodium, so I'm going to say no. This is not necessarily a healthy food, however, in small quantities is not terrible for you. But who can eat small quantities???
Serving Options
My all time favorite is a nice fresh piece of crusty French bread with a thick layer of salted butter on it. You could also use tortillas or naan bread. Or really, this stuff is great just on it's own.

Totally! I even sometimes think this soup is better the second day. You know, like Chinese food. Follow all the recipe instructions then store the soup in an airtight container in the fridge for up to 3 days.
Heat in the microwave or on the stove over medium heat until warmed through.
Freezing Instructions
Most definitely. make the soup then store it in an airtight container in the freezer for up to 3 months. Thaw in the fridge overnight then reheat in the microwave or on the stove over medium heat until warmed through.

Instant Pot Corned Beef and Cabbage Soup
Ingredients
- 4 cups cooked corned beef
- 3 carrots, chopped
- 2 russet potatoes, peeled and cubed
- ½ head cabbage, chopped
- 6 cups chicken stock
- 1-2 tsp. black pepper (according to preference)
- 3 oz. tomato paste
- 2 tsp. Salt, (to taste)
- 1 tbsp. bacon fat
- 4 tbsp. cream (optional)
Instructions
- Heat the bacon fat in the Instant Pot on the highest saute setting. Add the cabbage and saute for 2-4 minutes, until softened.
- Add the tomato paste and stir. Add the potatoes, carrots, corned beef and seasonings and stir to combine.
- Add the stock and cream (optional) and set the Instant Pot to pressure cook on high for 15 minutes.
- Use the quick release to release the pressure when done cooking. Season with additional salt as necessary and serve with crusty bread.
