The perfect party appetizer, this Caramelized Onion Flatbread Pizza is made with sweet caramelized onions, salty, smoky crumbles of bacon, crumbled blue cheese and a drizzle of honey. Eat it for dinner, or serve it as an appetizer - either way it's a real crowd pleaser!
I love this flatbread pizza as it's great for entertaining (I never entertain), but also great for Friday night pizza night (I'am all about this) or game days. We like this almost as much as we like this Bulgogi Beef Korean Pizza, Sardine Pizza or this Tandoori Chicken Pizza (sorry - these are just so good I don't think anything can beat them out).
But honestly, I love this flatbread because it is incredibly delicious. And easy. Store bought flatbread topped with sweet caramelized onion, bacon and blue cheese (just as good as these delicious bagel bites also made with bacon).
I mean really, how can you say no to bacon and blue cheese? And those absolutely amazingly deep flavored caramelized onions? It's all just so good.
The Ingredients
I'm not really excited about making my own crust, so I like to use this flatbread. You can also use pita bread or naan as the crust, like I did for this Brazilian Pizza.
You can even use puff pastry like we used in this Mushroom Tart. Or if you're ultra motivated, make your own pizza crust.
I use yellow onions, but you can also use brown or white for this recipe. I just prefer yellow for the flavor.
Any blue cheese works as well. I use the crumbles as they are easy to use, but you can also buy a block and crumble it yourself if you prefer to use a higher quality blue cheese.
Any bacon but thick cut will work. Thick cut bacon is more difficult to crumble. A thinner cut bacon will be easier to crumble.
I always prefer to use a high quality honey as the flavor is better.

Step By Step Instructions
Preheat the oven to 400F degrees.
Add sliced onions and butter to a medium saucepan (2 quart) and cook over medium heat, stirring periodically until onions are caramelized, about 10-15 minutes.
Place the flatbreads on a parchment paper lined baking sheet.
Spread onions on top.
Add the crumbled bacon and blue cheese.
Bake for 10-12 minutes, or until edges start to brown and flatbread starts to crisp. Remove from oven and drizzle with the honey. Slice and serve.
I like to serve this with a side of hot beef consommé - it goes great with the caramelized onions!
Variations
- Spread some pesto on the flatbread before adding the topping.
- Add some sliced jalapenos for a little added spice.
- Replace the blue cheese with goat cheese.
- Add some sliced apples or pears to the pizza.
- Substitute a good quality balsamic vinegar for the honey.
Expert Tips
- Warm the honey slightly so it's easier to drizzle when the flatbread comes out of the oven.
- Substitute goat cheese for the blue cheese if desired.
- You can make the caramelized onions ahead of time and store them in the fridge for up to 3 days.
- Cut the flatbread in bite size pieces for party appetizers if desired.
To freeze after cooking, wrap the pizza in wax paper then plastic wrap or foil. Place in a freezer bag and freezer for up to one month. I don't recommend freezing this before cooking.
How to Store Flatbread Pizza
Let the pizza cool then wrap it in plastic wrap or place in a plastic bag. Store in the fridge for up to 3 days or freeze per the below instructions.

I really like the idea of using flatbread for this pizza. I've made mini pizzas using naan bread before, and once tried making my own pizza dough but making the dough is definitely more work than I do. With the kids, there just isn't the time. So I am excited to try this one with them 🙂
