These sous vide egg bites are made with meaty bacon, nutty gruyere and are even better than the Starbucks egg bites! You will love this recipe because it only take 5 minutes to put together, then rest of the cook time is hands off!
While we love these oven baked egg cups with hashbrowns, these sous vide egg bites, or egg muffins, are a whole different world of goodness.
And yes, you heard it right...these are BETTER than Starbucks ones. At least in my humble opinion 🙂 so if you love the Starbucks egg bites, you'll want to try this recipe.
This copycat recipe is light, fluffy, and just absolutely perfectly cooked with cheese and bacon - you can't go wrong when you make these - that's the best part about sous vide cooking!

Ingredients to cook egg bites

We are lucky enough to get regular farm fresh eggs from the in-laws, but if you're not so lucky, try to get the freshest eggs from the store that you can to get the best results.
We use the egg yolk and egg white to make this recipe. Using egg whites ensures they stay light and fluffy.
Gruyere is a hard cheese that is almost like a combination of swiss and parmesan - it has a nice nutty flavor and is packed with umami. Substitute Parmesan is you don't have gruyere.
I have started using the microwavable bacon from the store for recipes like this so I don't have to dirty a whole pan and it works great. It crisps up well and is quick and easy.
However, you can also make this sous vide bacon that comes out perfect and easy to crumble if you have some extra time on your hands!
You will also need 8-4 ounce jars with lids and a blender to make these egg bites.
Add-ins and options
These egg bites are so versatile which is another reason I love them. Here are some ideas for add-ins before you cook them:
- Sauteed onions or peppers (make sure they are chopped finely so they are not too chunky in the jar)
- Diced/minced jalapeno
- Sauteed minced garlic
- Sauteed mushrooms in butter
- Chopped roasted red peppers or even these roasted jalapenos
- Sauteed spinach or kale, chopped
- Top with this cured salmon right before serving.
- Substitute cheddar cheese, Monterey jack cheese, pepper jack cheese, or any other shredded cheese for the gruyere if you prefer. Ham and cheddar cheese is a great combo!
- You can add cottage cheese in place of the cream cheese for a more umami flavor.
- Substitute smoked or breakfast sausage for bacon if desired.
Step by step sous vide recipe instructions
Step 1: Heat a sous vide water bath to 170°F degrees. Spray 8-4 ounce mason jars with nonstick cooking spray.
Step 6: Remove the egg bites from the water bath with tongs and let cool until they can be touched.
Step 7: Remove the lids and serve straight out of the jar. Garnish with chopped chives, peppers and/or hot sauce if desired.
They come out just like Starbucks version, only better and made right at home for waaaaay cheaper.
How to serve Starbucks sous vide egg bites
We love our egg bites served many different ways - they are not just for breakfast! They also work just great for meal prep as you can make a bunch at once.
- Alongside this strawberry spinach salad for a low carb lunch.
- Try this cilantro chimichurri, sous vide hollandaise or easy chimichurri on top.
- I like to eat them with these air fryer hash browns on the side.
- Serve them with air fryer biscuits on the side or as a sandwich.
Expert tips to make at home
- Blend the egg bites for at least 1-2 minutes to allow them to get slightly fluffy - this keeps them lighter while cooking.
- Do not forget to spray the jars with non-stick spray to prevent sticking.
- Don't overtighten the jars or they may crack while cooking. Make sure you stop tightening as soon as feel the lids grab the jars.
- Place the jars in the water bath at 120°F degrees to avoid cracking from temperature shock.
- For a meatless option, you can omit the bacon. You may need to add additional salt to make up for the bacon.
- The recipe can be doubled or tripled.
Frequently asked questions
Sous vide egg bites contain a high amounts of protein, which has many health benefits. If you are following a high protein, low carb diet, these egg bites are perfect. They do however, also contain a high fat content which can be considered unhealthy is not eaten in moderation.
It is likely that they are being cooked at a temperature that is too high or for too long. This is common when cooking egg bites in the oven. Cooking egg bites sous vide will result in the perfect consistency every time.
If you blended the mixture well before cooking, they should stay fluffy when served immediately. As time passes, the air will naturally seep out of the egg bites, causing them to start to collapse.
Egg bites can be stored in the fridge right in the jars for up to 5 days. You can reheat them in a 150°F degree water bath to maintain their fluffy consistency.
You can also reheat in the microwave for 30 seconds or the toaster oven, but they do come out more dry and rubbery.
I don't recommend freezing them as it affects the consistency of the eggs. That said, you CAN freeze them if desired by removing them from the jars, placing them on a baking sheet and placing them directly in the freezer for 3 hours. Transfer them to a freezer bag and store for up to 3 months. Thaw in the fridge overnight and reheat.

Sous Vide Egg Bites with Bacon and Gruyere
Ingredients
- 8 eggs
- 4 slices cooked bacon
- 2 chopped green onions green parts only
- ¾ cup grated gruyere cheese
- ¼ cup heavy cream
- ½ teaspoon salt
- ⅛ teaspoon black pepper
- 1 tablespoon cream cheese
Instructions
- Heat a sous vide water bath to 170°F degrees.
- Spray 8-4 ounce mason jars with non-stick cooking spray.
- Crumble the cooked bacon and divide it evenly among the 8 jars.
- Combine all the remaining ingredients (except green onions) in a blender and blend until smooth and slightly fluffy, about 1-2 minutes.
- Fill each jar about ¾ full with the egg mixture and top with a sprinkle off green onions.
- Screw the lids onto the jars until just "finger tight." Basically, once you feel the lid grab the jar, stop tightening. You may feel like it's not tight enough, but once the lid grabs you are good to go.
- Place the jars in the water bath and cook for 1 hour. **I put my jars in once the water bath once it reached 120F degrees so the jars would not be shocked by the temperature difference and crack.
- Remove from the water bath with tongs and let cool until they can be touched.
- Remove the lids and serve straight out of the jar. Garnish with chopped chives, peppers and/or hot sauce if desired.

Can you use anything other than 1/2 pint jars? Could you use silicone egg bite molds w/tops that are sealed in a plastic bag or vacuum seal bog?

As long as you're able to seal the molds really well to ensure they don't open while cooking (I've had trouble in the past with silicone lids in the past). You could also just make one large batch and cook it in a bag, then cut it into portions when it cools. Hope that helps!
