This Sweet Potato Breakfast Hash is the ultimate breakfast comfort food with smoky salty ham, spicy jalapeno, caramelized sweet potatoes, onions and sweet red peppers...all topped with beautiful yolky, baked eggs and ready in 30 minutes!
Tender caramelized pieces of sweet potato paired with spicy jalapenos and onions, sweet red peppers and the most delicious salty cured ham all topped with a gooey egg is just perfection.
And it's done in 30 minutes. Now that's a breakfast I can get behind.

Ingredients

Sweet potatoes, obviously. You can use orange, white or even purple sweet potatoes! They all taste amazing.
Any store bought pre-cooked ham or leftover ham from that holiday meal will work.
I like to use a nice smoked paprika for this recipe - it really goes well with the sweet potato and jalapeno.
A jalapeno adds perfect spice - you can also use an Anaheim pepper for less spice, or serrano peppers for more heat (we looooove serranos).
Step By Step Instructions
STEP 1: Preheat the oven to 375F degrees.
STEP 2: Heat a large oven proof skillet over medium heat and add the olive oil. Add the sweet potatoes and cover.
Cook for 5-7 minutes, stirring periodically to prevent burning.
STEP 3: Add the ham, onion, red pepper, jalapeno and spices.
STEP 4: Mix to combine and cook for 5-7 minutes, until the vegetables have softened.
STEP 5: Remove from heat. Break 4 eggs over the top of the hash and place in the oven.
STEP 6: Bake for 15-20 minutes, until the egg whites are set. Garnish with cilantro and serve with toast, air fryer biscuits, or cinnamon swirls.
For extra deliciousness, top this hash with these sous vide poached eggs or sous vide soft boiled eggs!
Add Ins and Options
- Replace the ham with cooked bacon
- Mix in some green onions
- Add kale or spinach before putting in the oven for a little green nourishment
- Sprinkle with some feta or goat cheese (we like a little blue cheese too)
Expert Tips
- If you don't have an ovenproof skillet, you can cook in a regular skillet, then transfer to any oven safe dish. You can also fry the eggs separately and top with the fried eggs.
- You can leave the peel on or peel the sweet potatoes, depending on your preference. I prefer to peel them for a better caramelized texture.
- Be sure to stir the sweet potatoes every couple minutes while cooking them to prevent burning. I also recommend using a non-stick pan.
- Add an additional jalapeno for extra spice. You can also omit the jalapeno if you prefer no spice.
Frequently Asked Questions
Typically, what you find in your local grocery store are sweet potatoes. What they call yams are usually sweet potatoes. Yams have a much rougher looking skin, almost like tree bark. Read more about the difference in this article from Bon Appetit.
You can definitely eat the skin! It is filled with all sorts of vitamins - just make sure to wash it thoroughly before cooking. For this recipe, I peel the sweet potatoes, but you are welcome to leave the skins on as well.
This is an awesome make-ahead dish. Just make the hash (without the eggs) and store in a covered container in the fridge for up to 3 days. Place in an ovenproof dish, break the eggs on top and cook according to the recipe instructions when ready.
While you can do it in an airtight container, I don't recommend it as it causes the sweet potatoes and veggies to become very mushy.

Sweet Potato Hash Recipe
Ingredients
- 2 cups diced sweet potatoes
- 2 cups diced cooked ham
- ½ red bell pepper diced
- ½ small onion diced
- 1 jalapeno diced
- 1 teaspoon cumin
- ¼ teaspoon black pepper
- 1 teaspoon paprika
