Quick and easy to make and perfect for meal planning, this Curried Chickpea Salad is packed with incredible texture and flavor!

There's just something about that slightly spicy curry flavor that makes me feel so good. Some might even say I'm obsessed with curry (this Cauliflower Tikka Masala is one of my favorite thing EVER). Because I am.
Like this Curry Ramen that is just droolworthy, or this spicy potato curry....or this Instant Pot chana masala. I love them all, it's so hard to choose!
But what makes this chickpea salad so awesome is how easy it is to make. Mix everything together and roast it in the oven...there's not that many steps guys. This is easy stuff.
And it's sooooo good. Like just so good. The boyfriend was eating a pretty darn incredible spaghetti with meat sauce, and he was pretty jealous of my little salad.

Ingredients
Cannes chickpeas, fresh zucchini, curry power and garam masala are the main ingredients in this recipe. You should be able to get all ingredients at your local grocery store. The full list of ingredients is included in the recipe card below.
What is Garam Masala?
Garam masala is a mixture of ground spices such as coriander, cumin, cardamon, fennel, cloves, peppercorns, cinnamon and nutmeg (may also include others depending on the specific mixture). It is commonly used in Indian cooking and has quickly become one of my favorite spices to cook with (plus it's super easy to make your own garam masala). Step By Step Instructions
Preheat the oven to 450F. Place the zucchini, onions, and chickpeas in a bowl.
In a separate bowl, mix the olive oil, salt, curry powder, garam masala, garlic and lemon juice together.
Pour the mixture over the zucchini mixture and mix well.
Spread the mixture on a parchment paper lined baking sheet. Bake for 25 minutes, stirring once halfway through.
Garnish with green onions and serve.
Servings Tips & Variations
- Serve with a fried egg on top;
- Serve it with Naan Bread (make it or buy it - this link is for an awesome recipe);
- Add in a handful of raisins, dried cranberries, dried apricots, dates or other dried fruits for a hint of sweet flavor;
- Add cashews for a slightly crunchy, creamy texture;
- Add ½ diced red pepper at the same time as the zucchini;
- Replace the green onions with chopped cilantro;
- Serve this as a salad, on a sandwich, in a wrap, or over rice.
Expert Tips
- Roast for less time if you prefer a crisper texture to the zucchini;
- Add ¼ teaspoon of cayenne pepper for added spice;
- Substitute yellow squash for the zucchini if desired - or use a combination;
- Be sure to stir halfway through so the vegetables caramelize on all sides.

Warm Curried Chickpea Salad with Zucchini
Ingredients
- 3 medium zucchini cut in ½" pieces
- 1-15 ounce can chickpeas rinsed and drained
- 2 garlic cloves minced
- ½ medium onion sliced
- 1 tablespoon curry powder
- 1 tablespoon garam masala
- 2 teaspoons lemon juice
- 3 teaspoons sea salt
- 3 tablespoons olive oil
- ¼ cup sliced green onions (optional for garnish)
Instructions
- Preheat oven to 450F.
- Place the zucchini, onions and chickpeas in a bowl.
- In a separate bowl, mix the olive oil, salt, curry powder, garam masala, garlic and lemon juice together.
- Pour the mixture over the zucchini mixture and mix well to coat the vegetables.
- Roast for 25 minutes, stirring once halfway through. Veggies should be easily pierced by a fork and caramelized around the edges.
- Garnish with green onions and serve.

I already did love garam masala, but I had never tried it before on zucchini. AMAZING! And I love the combination with the chickpeas. This is so easy to make, and the fried egg on top takes it to a whole new level. This is so easy and delicious! It's going into my regular rotation.
