Potato Curry (Aloo)
Place the whole spices in a skillet over medium low heat. Cook, stirring often until they start to become fragrant
Grind the spices
Cook the onions and garlic and ghee
Add the spices and cook for 1-2 minutes
Add the tomatoes and cook for 2-3 minutes.
Add the broth, potatoes and coconut milk and bring to a simmer.
Cook for 25 minutes, until potatoes can be easily pierced with a fork.
