Chinese BBQ Pork Belly Bites
These crispy
pork belly bites
are braised in the most amazing Chinese BBQ inspired braising liquid, then fried to crispy perfection.

Ingredients
1
pound
pork belly
cut in 1" pieces
1
tablespoon
Serious Foodie Chinese BBQ Spice Rub
¼
cup
sake
¼
cup
chicken stock
1
tablespoon
soy sauce
2
garlic cloves
chopped
1
teaspoon
grated ginger
2
tablespoons
mirin
¼
cup
vegetable oil
Instructions
Combine all ingredients (oil) in a large pot or Dutch oven.
Simmer for 30 minutes
.
Drain the pork belly,
reserving the cooking liquid
.
Heat the vegetable oil in a skillet or large pot over medium heat (
heat to about 325-350F degrees
).
Add the pork belly (
separate in two batches
) and
cook until browned and crisp
on the outside. Remove and drain.
Serve immediately with toothpicks.
*Optional-serve drizzled lightly with the cooking liquid for added flavor.
Notes
Pork belly will smoke
a little with frying, so make sure you have the fan on. Turn the heat down if it starts to smoke too much (or starts to burn).
Reserving the cooking liquid
is optional only if you want to drizzle a bit over the pork belly bites before serving them.
These bites can also be
made into a meal
by serving them alongside
fried rice
and/or
spicy green beans
.
The recipe can easily be doubled or tripled (or more).
