Preheat the oven to 250F degrees. Line a baking sheet with parchment paper and place a baking rack on top.
Combine the rice flour (or regular flour), salt and baking soda in a large bowl or zip lock bag.
Pat the chicken wings dry. Place the wings in the bag and shake to coat with the mixture.
Bake for 25 minutes.
Turn up the heat to 400F degrees and bake another 30 minutes until golden brown and crispy.
Remove wings from oven and place in a bowl. Pour sauce over wings and toss to coat.
Pour wings back on the baking sheet (remove the rack) and bake at 400F degrees for 10 minutes, until crispy and caramelized.
Serve immediately.
Guava BBQ Sauce
Combine all the sauce ingredients in a saucepan and heat over medium heat. Bring to a simmer and continue stirring until guava paste has dissolved.
Notes
You may need to smash the guava paste against the edge of the saucepan to move the dissolving along faster. Cut the guava paste into small pieces before adding it to the sauce to dissolve quicker.
Substitute brown sugar for the coconut sugar if necessary.
If the wings don't get caramelized enough, pop them under the broiler for a couple minutes. Be sure to watch them as the BBQ sauce will burn quickly.
Add additional crushed red pepper to make them spicier.
If you can't get rice flour, you can substitute all purpose flour.
