Fire Roasted Tomatoes
Fire roasted tomatoes have an amazing smoky, umami taste that adds so much more to a dish than regular canned tomatoes.

Ingredients
1
pound
Roma tomatoes
halved lengthwise
1
tablespoon
olive oil
¼ to ½
teaspoon
salt
depending on preference

teaspoon
pepper
Instructions
Preheat an oven or grill to
450F degrees
.
Slice the tomatoes in half lengthwise.
Place them in a bowl and add the olive oil, salt and pepper. Toss to fully coat the tomatoes.
Oven Instructions:
Place the tomatoes on a baking sheet, sliced side up, and
roast for 40-45 minutes
.
Grill Instructions:
Place the tomatoes on a clean, oiled grill, sliced side up, and grill for about
10-12 minutes
.
Remove and eat right away or pack in olive oil in jars and store in the fridge for up to 2 weeks.
Notes
You can use
any kind of tomato
in this recipe. I use Roma because they are cheaper and more abundant at the store.
You can also use
canned whole tomatoes
in this recipe if you do not have fresh.
If you use the grill to cook them, make sure you
oil the grill grates
to prevent the tomatoes from sticking.
If you roast them in the oven,
line your baking sheet
with foil or parchment paper to make cleanup easier.
You can try this with
other vegetables
such as eggplant, zucchini, peppers, and squash.
