These grilled fruit kabobs are made with fresh chunks of your favorite fruit, skewered and grilled to get a light smoky charred flavor, then served with atangy chili lime vinaigrette.
Heat the grill to 400°F and make the fruit skewers.
Brush the skewers and the grill with olive oil and place them on the grill for 2-3 minutes each side, until light grill marks form and fruit edges are lightly caramelized.
Remove from grill and drizzle with chili lime vinaigrette. Serve on the skewers or remove and place in a bowl.
Chili Lime Vinaigrette:
Mix all ingredients together until well combined. Can be made ahead - will keep in the fridge for several weeks.
Notes
Any fruit that can be skewered will work for this recipe. You will need a total of 5 cups of chopped fruit.
Fruit should be cut in large enough pieces that it can be easily skewered; about 1-2" minimum. Keep the pieces as uniform as possible.
Brush the fruit skewers and the grill with olive oil to prevent the fruit from sticking.
The fruit will have light grill marks on it when it's done.
Sprinkle VERY lightly with salt and/or glaze with honey to bring out the flavor of fruit even more.
You can use wood skewer or metal skewers. If using wooden skewers, soak them in water for 20-30 minutes before putting the fruit on.
