Place the ginger, green onions, dried shiitakes, dried shrimp and soy sauce in a large pot with the chicken broth and bring to a boil. Simmer for 20 minutes. Taste the broth and add additional salt to taste. If you used unsalted or homemade broth, you may need to add additional salt.
While the broth is simmering, cook the wontons and noodles according to the instructions on the package(s) and set aside.
Strain the broth to remove all the aromatics and place back on the stove to keep warm.
Place some noodles, wontons and char siu (optional) in a bowl and ladle the broth over the top.
Garnish with green onions and fried wonton strips and serve.
Notes
Be sure to taste the broth before adding salt. Some store bought broths have a lot of salt, and homemade will typically have none. Salt to your taste preference.
For a clearer soup, strain the broth through cheesecloth to remove any particles.
To make it a full meal you can add pieces of chicken, turkey, pork, tofu, shrimp, etc.
